Vines are south-facing. Soil is a combination of clay and chalk, ideal for water retention. Planted at 300 - 350 m.asl. 4000 plants per ha.


Hand harvested in mid/late September, then immediately crushed and de-stemmed. Maceration lasts 7 - 8 days, and takes place in special tanks - in order to gradually extract the noble components from the skins. Bottled in the spring following the vintage.
