Viticulture

The vineyards are east, south and west-facing, and are are planted at an altitude varying between 350 - 420 m.asl. Vines range between the 10 - 40 year mark. Soil is of a medium density, with a balanced mix of chalk and limestone. Vines are guyot-trained, with 4,500 planted per ha.

Vinification

Hand-harvested, usually in the second half of October. The fermentation process lasts 15 days, and is carried out in large French oak barrels at a controlled temperature, with daily punching down. Next, it is transferred to stainless steel tanks for the malolactic fermentation, and then refined for two and a half years in 35 - 50 hl. Slavonian oak barrels. The wine is usually bottled in August, and finally aged for another 12 months before commercial release.
