Viticulture

Produced from 2 vineyards: Podernovone (planted at an altitude of 350 m.asl), is south-west facing and planted in 1997. Le Chiuse di Sotto, planted at 200 m.asl is south-west facing and planted in 1989. Soil is a typical mix of rich clay and "galestro" - a calcareous marl unique to Tuscany.

Vinification

Hand-harvested in October. Fermentation of around 22 days up to a (deliberate) maximum of around 33° C. Maceration on the lees for 30 days. The new wine is aged in 30 hl. "botti" - large Slavonian oak barrels - for 30 months. The wine is released, by law, 5 years after the harvest.
