Harvested in mid-October, initial fermentation in steel containers for 10 - 20 days at a controlled temperature of 26° - 28°C. Aged in 10 - 15 hl. barrels for 30 months, then refined in the bottle for 6 - 8 months. 6 - 8,000 bottles produced annually.
