The Sangiovese grapes used to make this wine are hand-picked from Fontodi's best vineyards to ensure the highest quality. Fontodi vineyards are located in a natural amphitheatre with an ideal microclimate for grape growing - warm, dry with significant temperature contrasts between day and night. Cultivated organically, the vines are fertilized using manure (from the winery's own herd) and vine clippings. About 6,000 plants per ha. Guyot-trained.


The fermentation process is carrried out using only autochthonous yeasts. Maceration takes place in stainless steel vats, with regular punching down, maintained at a controlled temperature for 3 weeks. Matured in Troncais and Allier barriques for at least 18 months.

NB. The winery's new cellar has been constructed on descending levels to benefit from gravity in the fining process.
