From the Vigna del Sorbo vineyard in the renowned 'Conca d'Oro', a natural amphitheatre with a specific microclimate ideal for grape growing - warm and dry with a significant contrasting temperature between day and night. South-westerly exposure. 3,500 - 6,000 plants per ha. Guyot-trained.

Vinification

Spontaneous fermentation with autochthonous yeasts. Maceration takes place at a controlled temperature in steel tanks with frequent punching down for over 3 weeks. Matured in Troncais and Allier barriques - of new and second passage - for 24 months. 30, 000 bottles produced annually.

NB. The winery's new cellar has been constructed on descending levels to benefit from gravity in the refining process.
