Viticulture

From Casalino vineyard. Soil is light, sandy and rich in lime. Vines are Guyot-trained. 1500 kg. of grapes yield 500 litres of wine. Planted at 450 m.asl.

Vinification

Selectively hand-harvested in October, then hung up from the rafters to dry. Sugars are usually concentrated (as a result of the drying of the grapes) by February, when they are ready for pressing. The highly concentrated must is subsequently left to ferment in small oak casks where it is allowed to mature for a full five years.

Grape Varieties

A blend of Trebbiano and Tuscan Malvasia.
