Viticulture

From a high plain in Fennberg (a subzone of Margreid) at an altitude exceeding 1000 m.asl, with natural sheltering from strong North winds, and a rare microclimate. Soil is mostly loamy, with some limestone. 8,500 vines per ha. Vines are guyot-trained. Yield is 50 - 60 hl. per ha

Vinification

After 4 – 6 hours of maceration of the grapes, fermentation takes place at a constant temperature of 20 °C. The wine is matured with regular batonnage on the lees in large oak casks for 7 months. 70% is fermented and aged in stainless steel on the fine lees for 7 months. The wine is further matured for 2 months in concrete vats, and 1 year in the bottle.
