Viticulture

From the east-facing hillside vineyards of Kurtatsch. Vines planted between 450 - 480 m.asl. Soil is a rich combination of moraine, chalk and gravel, providing good drainage. Vines are guyot-trained, with 6,500 planted per ha. yielding 20 hl. per ha.

Vinification

The harvest is carried out at the end of January. As temperatures plummet over winter, the berries are affected by noble mould 'botrytis cinerea' which causes the natural concentration of the grapes juices. Alcoholic fermentation takes place over the course of two months in small oak barrels (barriques). The young wine then matures on the yeast for 11 months and finally for a further 12 months in the bottle.
