From the 'Fossato' vineyard, in the township of Poggio San Marcello. Soil is of medium consistency, with a substantial clay presence. Vines are planted at 205 m.asl. and cordon-spur trained. Yields 70 ql. per ha.
Hand-harvested in October, 10 - 14 late. Fermentation initiated using local yeasts, and completed using selected yeasts. Aged for 5 months on the fine lees.
