From a 10 ha. vineyard, benefiting from north-south exposure. Soil is a rich combination of clay and chalk. Vines are cultivated as free-standing bushes.
Grapes are carefully hand-selected, and are then left to fully mature before being left to dry in the open air on 'graticci' for 'appassimento'. As Autumn wears on and the climate cools, the natural sugars gently concentrate in the grapes. The wine undergoes a slow fermentation at strictly controlled temperatures, and is aged in small wooden barrels.
