Viticulture

From a 60 ha. estate with north - south exposure. Soil is a combination of clay and chalk. Vines are cordon - spur trained.

Vinification

Selected grapes are harvested in late September, manually and mechanically. Fermented at a controlled temperature for 7 - 10 days, with a brief continuation of maceration post-fermentation. Spontaneous malolactic fermentation. Aged in stainless steel, with a brief 6 - 8 month passage in 50 hl. Slavonian oak barrels, then 12 months in cement vats. Refined in the bottle.
