From a 45 ha. estate. Soil is a combination of clay and chalk. Vines are cordon-spur trained.
Harvested in late September, partly by hand. Grapes are gently destemmed. Fermentation takes place in stainless steel tanks at a controlled temperature for 15 days. A spontaneous malolactic fermentation occurs at the end of the alcoholic fermentation. Refined in the bottle for a month.
