Soil is rich in volcanic minerals. Vines are planted at an altitude of 650 - 750 m.asl, with a good range in temperature between day and night.
Harvested in mid October. Hand-selected grapes are cold-macerated, then soft-pressed. The fermentation process lasts 10 days at a controlled temperature. Malolactic fermentation takes place in stainless steel vats. Aged in stainless steel, then 5 - 6 months in barrique, and finally 3 - 4 months in the bottle.
