Soil is rich in volcanic minerals. Vines are planted at an altitude of 650 - 750 m.asl, with good temperature variation between day and night.
Harvested in mid October. Hand-selected grapes are cold-macerated, then soft-pressed. After a 48-hour settling process, the wine is left to ferment at a controlled temperature for 15 - 20 days. Aged in stainless steel vats on the fine lees, then refined for 3 - 4 months in the bottle.
