Viticulture

Vines are cultivated in volcanic soils, rich in potassium, phosphorus and other elements. Though quick draining, this type of soil retains sufficient moisture to sustain the vine even in times of drought. The high concentration of minerals in the soil favours the production of top quality fruit. Vineyards are in cool north-facing sites at 300 – 400 m.asl in Monte Porzio Catone in the classic Frascati production area to the south of Rome.

Vinification

Produced by ultra gentle pressing, and then controlled fermentation of the free run juice at cool temperatures (below 18 °C). Then the wine is left to mature in stainless steel until bottling in early March.

Grape Varieties

Produced from a blend of Malvasia del Lazio, Malvasia di Candia, Trebbiano Toscano and a small percentage of Chardonnay.
