Viticulture

Vines are cultivated in volcanic soils, rich in potassium, phosphorus and other elements.
Though quick draining, this type of soil retains sufficient moisture to sustain the vine even in times of drought.The high concentration of minerals in the soil favours the production of top quality fruit. Vineyards are planted in sites at 300 – 400 m.asl in Monte Porzio Catone in the heart of the historic Frascati production area to the south of Rome.

Vinification

Whole berries are cold macerated for 24 hours followed by very gentle pressing. The fermentation is very slow and cool, at around 18 °C. Then the wine is left to mature in stainless steel vats and bottled in early March.
