Viticulture

From a vineyard surrounded by the walls of the parish of local church San Lorenzo, in the Sondrio commune. Vines are guyot-trained, and planted at an altitude of 450 m.asl. Vineyards are south-facing. Soil is predominantly composed of sand (80%) with some lime (20%). 4,000 vines planted per ha.

Vinification

Harvested in early October. Grapes are then gently destemmed and crushed, before being transferred to stainless steel tanks for 18 days to ferment at a controlled temperature of 25ÂșC. Aged in oak for approximately 16 months. Fined in the bottle for 10 months before commerical release.
