From the Collecorvino vineyard, planted at 250 m.asl. Vines are cordon-spur trained. Soil is rich in clay. 4,000 vines planted per ha, yield is 100 ql. per ha.
The must is left to macerate at a controlled temperature of 8-10°C, then soft pressed. Alcoholic fermentation then takes place for 15 days, followed by a malolactic fermentation. The wine is then transferred to oak barriques. Aged for 6 months in stainless steel.
