Sangervasio’s cellars are located inside the historical buildings of the village. All the different parts that compose the cellar, the barrel room and Vin Santo room, have been maintained and were restructured in 1980.
The organic family winery is now run by Luca Tommasini.
Estate
The San Gervasio estate is located inside the frame of the Pisa Hills, 25km away from the Thyrrenian Sea. The whole estate consists of 400 hectares, of which 22 are vineyards, sitting between 160 and 200 meters above sea level. The climate is typically Mediterranean, dry and well ventilated.
They have a high density of plants per hectare (between 6000 and 10000 vines per hectare) which all are grown and cultivated organically growing a wide selection of grape varieties, both international and indigenous. The estate places a main focus on local grapes like Sangiovese, Vermentino and Trebbiano and also grows Merlot, Cabernet Sauvignon, Chardonnay, Sauvignon Blanc.
